A Little Something for the (Rocky) Road Ahead

By Roisin Burrington

Let’s make the road to exams feel a little less rocky. These chocolatey delights are especially good when shared with classmates as a post-exam pick-me-up!

Ingredients:

  • 100g butter

  • 200g dark chocolate

  • 200g milk chocolate

  • 3 tbsp golden syrup (or corn syrup)

  • 200g digestive biscuits (or any kind of plain cookie)

  • 150g mini marshmallows

  • Optional extras – dried cherries, craisins, apricot, Maltesers, etc.

  • Icing sugar for dusting

Melt the butter, chocolate, and syrup together in a microwave. Break the biscuits into bite-sized pieces. Fold the marshmallows, biscuit pieces, and any extras into the chocolate mixture. Scoop into a dish or pan lined with plastic wrap. Refrigerate for at least 2 hours (this would be an excellent opportunity to study for your Contracts exam or do that assignment you’ve been putting off).

Once set, cut into small pieces, and place in a Ziploc bag with icing sugar. Shake the bag to coat bars in sugar. Store in the refrigerator in a tin… Or just eat them all on the spot. No judgment!
